I’ve been really struggling with dinnertime lately. DoorDash has become my go-to solution, but I’m beyond tired of the same ten restaurants. Plus, the convenience comes with its own set of problems: frequent errors that are tough to fix and inflated costs. Clearly, something had to change.

I’m a big fan of minimal-ingredient, one-pot meals, and I’ve discovered that I’m much better at baking than cooking. That’s where sheet pan meals come in. They’re incredibly simple, requiring few ingredients and minimal time. They’re also often low or no-carb and make use of vegetables that even my picky eater will actually enjoy. It’s like a miracle!

Below are some of the sheet pan meals I’ve tried and loved recently. I’ll keep updating this list as I discover more favorites.

If you’re looking to try out some sheet pan recipes, I highly recommend using this sheet pan with higher edges. The elevated sides are fantastic for keeping sauces and juices from spilling over. For lining your pans, I suggest using either aluminum foil or parchment paper, depending on what you’re cooking.

Aluminum foil is great for creating a solid lining that contains all those delicious sauces and keeps everything where it should be. On the other hand, parchment paper is perfect for baking, though it won’t hold sauces as well. I particularly like this pre-cut parchment paper because it eliminates the hassle of tearing sheets from a roll.
